Apple Pear White Wine Pie

I love pie. Pie has always been something that has brought me joy and I believe it to be the greatest dessert there is. I recently bought a book entitled Pie by Ken Haedrich and started baking pie. This is the first pie I chose to bake, what really caught my eye was the white wine and apple pear combo. One of the things I want to do with this site is come up with new delicious pie combinations to create a medley of taste, and what better fruits than traditional apple and it's pal the pear.

Pie #1 Apple Pear White Wine here it is.

4 cups of Apples 3 Cups of Pears cored, peeled, and sliced.

1/2 cup of sugar.

1 cup of white wine, I used a chardonnay.

Let the apples and pears wade around in the wine for about an hour.

Mix it up every 15-20 mins.

After an hour drain the wine and reduce it down to between 1/2 & 2/3 a cup.

2 tbs sugar in a separate bowl.

Mix 2 1/2 tbs cornstarch in with the sugar.

Big pinch of salt, 1/2 tsp lemon zest, & 1/8 tsp vanilla extract.

Pour the reduced wine back over the apples and pears.

Preheat your oven to 400°F.

Stir in the sugar/cornstarch mixture.

The mixture will begin to thicken.

Coat the apples & pears thorougly.

Mix in the salt, vanilla extract, and lemon zest.

Continue to thorougly mix all the ingredients together.

Once all mixed together pour the filling into your pie shell. I used a store bought crust, but I'll be making my own and showing you how to make your own crust next week.

Dot the top with butter.

Moisten the overhang of dough with milk.

(If you forget to do this the top and bottom crusts won't bake together closed...I forgot)

Transfer the top pie crust over the filing and press the overhang of both crust together.

Cut off the overhang with a knife or scissors.

Use a fork to press the two crusts together around the rim of your pie pan.

Vent the top pie crust any way you'd like.

Put it in the oven and bake for 30 mins at 400°F

After 30 mins reduce the temperature to 375°F & turn the pie 360 degrees.

Lay down some foil under the pie so that it catches any spillage.

Bake for another 30 mins.

Take the pie out of the oven and let it cool on a rack for 2 hours.

Slice, eat, & enjoy.

As you can see the slices came out all sloppy.

I blame it on the market brand dough.

Very delicious not as sweet as most apple pies, but very tasty.

That's all it is, doesn't seem so hard does it? Try it yourself it'll take you a few hours, but get a friend and bake a pie it's the best way to spend any moment of your life.
